STIR FRY CHICKEN UDON NOODLES WITH CHINESE CHILLI OIL
A curious twist on a traditional Japanese udon noodle dish from our friend and founder of The Curious Elephant, the very talented Melody Mok.

Cook Time: 20 min
INGREDIENTS
- Peanut or neutral oil
- 500g of sliced chicken breast
- 3-4 tablespoons of sweet soy sauce
- 3cm piece of ginger
- 5 cloves of garlic
- 1 packet of baby corns
- 1 red capsicum
- 125g of snowpeas or green beans
- 460g of udon noodles
- Curious Elephant Chinese Chilli Oil
INSTRUCTIONS
- Heat a non-stick pan over high heat with oil
- Add chicken and fry until brown all over - set aside
- Slice all vegetables
- Heat oil in pan, add garlic and ginger and cook for 30 seconds
- Add vegetables to the pan and cook until slightly tender
- Add udon noodles, cooked chicken and sweet soy sauce to the pan and cook for a further 1 minute
- Serve and drizzle a generous amount of Chinese Chilli Oil over the top
