Chef Max - Jerk Pork Steaks With Plantain Chips & Sauteed Baby Zucchini

Today we have one of Chef Max's favorites, Jerk Pork Steaks with Plantain Chips, Sauteed Baby Zucchini & Baby Leeks with lime wedges.

BBS pork shoulder steaks | 2pc |
Soy sauce | 4tbps |
Chinese 5 Spice | 1tsp |
Honey | 1tbsp |
Salt | To taste |
Black Pepper | To taste |
Plantain | 3pc |
Zucchini baby | 1 packet |
Baby Leeks | 1 packet |
Coconut Oil | 1tbsp |
Olive Oil | 3tbsp |
Lime | 1pc |
Step 1: First mix the soy sauce and chinese 5 spice and honey and marinate over the pork steaks and set outside the fridge for 30-40 minutes |
Step 2: Cut the plantain into 5cm round disks and remove the skin and set aside. |
Step 3 :Wash the leek and zuchini and sliice both lenghways |
Step 4 : Take a large sauce pan and fill with water and a pinch of salt and bring to the boil |
Step 5 : Once the water is boiled add the leeks and the zuchini and cook for2- 3 minutes. |
Step 6 : Peel the shallots and finely chop, peel the garlic and finely chop. |
Step 7: Drain the vegetables and set aside. |
Step 8: Warm a frying pan with the coconut oil and fry the plantain until crispy and golden then drain on a paper towel and season with salt and pepper. |
Step 9 : Warm a frying pan with olive oil and fry the pork steaks for 2 minutes either side. |
Step 10: Remove the pork and place on a resting rack and cover with tin foil. |
Step 11 : Add the vegetbales to the same frying pan and sautee until golden. |
Step 12 : Wash 1 lime and cut in half. |
Step 14 : To plate add a small pile of plantain chips and vegetables, add the pork and half a lime per portion. |
Step 19 : Serve immediatley and enjoy. |
